Vive le Cookie!

But, first an update on the previous post: The VwaV Seitan recipe makes quite a bit, so as you see, we have the beginning of three more meals in the freezer ready to go.










Liv was happy to help wash the Yukon Gold potatoes for....














'Miso-Curry Roasted Potatoes' from Vive le Vegan! pg. 68. These are so delicious, and the miso paste adds such a nice brown crispness to the spuds.










After seeing these cookies on nearly everyone's blogs and reading the rave reviews, I had to make them myself. 'Homestyle Chocolate Chip Cookies' from Vive are amazing & if you haven't made them yet, what are you waiting for?









'Double Chocolate Almond Explosion Cookies' from Vive are also delicious! I didn't have almond slivers, so I used whole almonds chopped up. Equally delectable are the Peanut "Better" Cookies from the same cookbook - Dreena really has a way with cookie recipes!




This weekend, we bought a new kitchen gadget, a blender. Enter....The SMOOTHIE! This is one of Art's just before hitting the motor, he likes his with yogurt, fruit, & some protein powder. The girls and I like ours with ice, fruit, & juice. Last night, I "Oooohed & Ahhhhed" over one with:
fresh pineapple
fresh banana
fresh plum
fresh cantaloupe
frozen strawberries
ice & OJ

Vicki, your photo of the VLV Miso-Curry Roasted Potatoes is fabulous! It's a good thing I just finished having lunch, or I'd HAVE to run to the kitchen and make them NOW!! I'm going to borrow the idea for tonight's dinner. Thanks!

ooo, that smoothie sounds delicious. Cantaloupe adds an interesting flavor and texture. We used to always make ours with yogurt, too. Now it's just fruit and water and greens. :)

The cookies look so good. I still haven't made Dreena's chocolate chip cookies, though I bought all the ingredients to do so. You're right, they're excellent.

Great post Vicki! You have been cooking a lot again. I've never tried those potatoes yet, but you have sparked my interest. Great cookies... I am jealous of the new kitchen gadget. We don't have one of those yet, but I am sure we would use it tones!

did you use a food saver? that's my next purchase...that and a toaster oven that everyone else seems to have...

That answers my question about freezing seitan. The miso potatoes look delicious! I really must order a copy of those cookbooks.

(My seitan goes in plastic containers in the freezer, and I'm lucky to remember what they are when they thaw out.)

Vicki - ha, the green bean craving went out the window because my employer is jerking me around...again. I can't even rehash it, it's so ridiculously wrong. I hate corporate america!!! So, the news kinda messed up my day and my stress level and I guiltily went for the fast food. Emotional eating...Ick.

But, tonight, green beans are on the menu no matter what!!

Cookies, smoothies, ready to grab seitan from the freezer, Liv washing the potatoes. Ahh, life is good.

Yukon gold is my favorite, but we messed up and didn't plant any this year. Dave is a yogurt in his smoothie kind of guy also, he adds soy protein powder to his too.

food saver is a machine that pulls all the air out of a bag that has your food stored in it...so that you can freeze it for like ever and it doesn't get the freezer taste. i'm DYING to get one.
