Kale is the "new" lettuce

I don't "hate" sandwiches. I like them well enough, and trust me, I've eaten my fair share of them -- usually as a last resort, mind you, like after crossing a desert. Which is literally true, because when we drive to CA, we try really hard to make Bishop before Erick Schat's closes because they make an amazing Veggie Sandwich. (it's hard to get fresh veggie food on the road!) But this is my sandwich story -- and this is my new high-water mark as far as sandwiches are concerned.


VwaV 'Tempeh Bacon' pg. 23 (cooked yesterday, cold from the fridge)
Tomato (organic, thin slices)
Kale (raw, hand-tear pieces from the spine)
Dijon Mustard (Woodstock Farms Organic)
Idaho Harvest Organic Golden Flax & Whole Grains Bread (Fresh & Local!)
Half of a California Avocado

I think kale is way better than lettuce in sandwiches. It has great flavor and really stands up to the sandwich squeezing & is prettier.


These are 'Lindsey's Peanut Butter Cupcakes' from La Dolce Vegan! pg. 239. They were delicious, we'll make them again & again.


This morning, I made Breakfast Ice Cream -- inspired by Gaia's post. Can't wait to share the photos with you -- it was a big hit! Have a wonderful weekend everybody!

I'm the same way about sandwiches. I don't usually have one unless there is nothing else in the house or it's just too hot to cook. :) I'll have to try the kale instead of droopy ole' lettuce next time, though.

Gaia's breakfast ice cream sounded pretty cool too. Any excuse to eat ice cream is good!

I actually really like sandwiches, and seeing your picture almost made me weep, it's so pretty! And you're right, raw kale is good. I almost always cook it, must remember to have it raw now and then.

That sandwich sounds good (both theone you maed and the one your bought) and I enjoy fresh kale on my sandwich when we have it in the garden.

I saw that scrumptious looking breakfast ice cream. Looks refreshing for a warm day. We're getting a little colder here in the mornings now, so warm dished like oatmeal are on my "plate".

I'm right there with you on the kale- it is way better than plain old lettuce in sandwiches. It's funny because now when I see people with romaine lettuce on their sandwiches, I do double take because I'm so used to the dark greenness of the incredibly healthy (and delicious) kale. Plus what meal with an avocado isn't delicious?

I agree about sandwiches--sometimes they can really be amazing, but usually they're just something to settle on. Yours definitely seems to be of the former variety! :)

I've actually never had kale in a sandwich. Rob would love that sandwich. Take out the mustard and I'm on board LOL The cupcakes look tasty!

I love kale... I haven't actually tried it raw though... funny, my friend Nancy just made those cupcakes for me! I was going to post a picture of them! LOL!

I LOVE sandwiches of all kinds and your's looks great.
did both of the girls par-take? I have only one avacado eater and she likes thems only stright up w/ salt..

I often forget that sandwiches are an option! Lol! I re-discover them and they end up with more veggies on them that I may as well make a salad. Lol... I love your suggestion of kale instead of lettuce! I love the crunchiness and bet it'd be great!!

Ohh, we made Gaia's breakfast ice cream today! YUM! I want to make a mango one soon. It's so easy and I'm slapping my head for not thinking of making them before! lol!

Kale, 'eh? Haven't yet ventured that way, but i sure love the way that sandwich looks. SO GOOD! The ingredients, including the dijon mustard (i have about 10 different mustards in my fridge at any given time, to tell you what i feel about a sandwich with mustard... i.e. you can't have one w/out... unless it's PB&J... but i digress) and the tempeh bacon, which i am sure is just insanely good.

I don't use iceberg lettuce in sandwiches unless i have to but now i think i might just try this kale business instead of other greens i use...

And last but not least, omgosh, those PB cupcakes. WOW, do those look amazing!!!
