Breakfast Ice Cream

Sometimes food is so delicious that you need two spoons to keep a steady rotation of intake. For Abi, this was one of those times.

GAIA'S BREAKFAST ICE CREAM

1 Banana
1 C. Frozen Blueberries
1 C. Frozen Strawberries
1 Tsp. Vanilla

Olivia cracks me up! After the first lick, she says, "Mommy is that cold?" and I say, "Yes, it's breakfast ice cream." Replys with, "I'll need the sunglasses."

I agree with Liv --- this is the cold, creamy, fruity taste that we enjoy in ice cream on a sunglasses wearing sunny day -- except this is waay better than real ice-cream because:

1.
it's freshly made each serving
2.
it's healthy: packed with antioxidents, vitamins & minerals
3.
it's cruelty-free because it's vegan
4. there are only four ingredients: and, you know where they came from

Plus, with this ice cream, it's so delicious that you kinda feel like you're getting away with something, especially eating it for breakfast. My reluctant fruit eater really digs into this entirely fruit dish!! It's simply brilliant!

Thank you to Gaia of Live It Up Vegan! for this recipe and the inspiration to make it.

Cutest. Pictures. Ever.

Love the sunglasses, very appropriate for an ice cream breakfast. Looks better than what I had this morning.

Abi is cracking me up! She may love ice cream as much as me, although I try to keep it neat these days. Simply adorable!

I loved Liv's response... sunglasses, that cracked me up too.

Great post (especially since it's ice cream).

Vicki, this is the best post! Your ice cream dishes and spoons are so cute! I love the two-fisted approach. Very efficient I must say. And the sunglasses! Awesome! Ice cream for breakfast - you're a rockin' mom!

My gosh Vicki, I swear I feel like I just won an Oscar or something.

Just to see those girls eating the same thing I ate almost everyday last week (yes...) is too much ! Same stickiness all over too !

So I would like to take this opportunity to thank my mom and dad who have always believed in me and Dr. Furhman for making me like fruit, and G*d for creating fruit, also the guy who invented the freezer to freeze the fruit, and finally you Vicki and your wonderful beautiful adorable girls for making me feel like a star :)))

BREAKFAST ICE CREAM! I only wish my mom was that cool to serve me ice cream for breakfast when I was a kid. Although I wasn't near as cute as your darling Olivia. She's a funny one with those stylish sunglasses!

LOL! SO cute!! I have been making this too, but we forgot to wear our sunglasses! LOL! I love how you listed the reasons it's so good to eat. It really does make you feel guilty when eating it for breakfast! Britty loves it too (in fact, she made it for me and wants to do it again.) Great stuff and totally adorable photos!!

Oh my goodness. The pics of your daughters are so cute!!!! Love the one with the sunglasses :) Your ice cream themed spoons and bowls are really neat. I received some ceramic ice cream cone shaped bowls as a gift about two years ago. Makes eating soy ice cream much more fun.

Also wanted to say that I made the Barley Vegetable Soup last night. It was great!!!

We had those ice cream dishes when I was a kid! How funny.

The pictures of Liv and Abi are priceless. Really really cute and the story that went along with it is adorable.

It's cool that you're capturing all of these special moments. It's almost like an online scrapbook. I'm sure when the girls are older, they'll appreciate the nostalgia.

Yes, Gaia has indeed inspired me to crave breakfast ice cream all the time now! I throw in a little flax meal or wheat germ in there and convince myself it's healthy. Although one day I put chocolate chips on... and I don't know how I can justify that!
Your daughters are adorable.
