Pancakes with Blueberry Maple Syrup & Sweet Potato Fries with Mango Sauce

Perk up your pancakes with 'Blueberry Maple Syrup' next time the griddle is hot -- the recipe's in Vive le Vegan, pg. 2o. This is the beginning of a simple recipe that'll make your pancakes and tummy happy. I love the color of blueberries....almost as much as the flavor.







The syrup topped 'Pancakes' from VwaV, page. 31. I omitted the optional cinnamon, and used vanilla soy milk instead of plain. I didn't do either of the 2 variations to this recipe, and kept it simple for the girls. Isa says, "Straight up pancakes, just like at the diner at 2.00 AM." The left-over cakes keep well in the fridge & are ideal for snacking through-out the day. Spread some peanutbutter on one, add a slice of banana and you have a little sandwich my kids love.



Though, Liv prefers hers plain --- AND, so does Jolie! If I had taken this photo a half second later, there'd only be one pancake. Luckily, there were more cakes to go around. She's such a good dog, and by all rights, that one was hers -- just look how close the pancake is to Jolie's nose.





These are 'Sweet Potato Fries' also from VwaV, page 114. In the bowl is my pretty successful attempt at duplicating a most fantastic dipping sauce served at a restaurant in town, PAIR, with their yam fries. We go there frequently on Saturday nights, and usually order the yam fries with THE mango sauce. I've asked a couple times if they'd part with the recipe -- each time, "No," accompanied with an are you kidding? look. This weekend, one of the servers gave it up! and so easily. I'd almost given up asking, but she was a new face, so I gave it a whirl. She shamelessly rattled off the recipe for me. Such a doll, and smart -- she knows how to work the tips! Below is my homemade, veganized version:

MANGO DIPPING SAUCE

1 Mango, finely chopped
1/4 C. Nayonaise
1 Tbsp. Sriracha Sauce

Combine it all and Chill. Call it your new fry sauce.

Does anybody else cook with Sriracha Hot Chili Sauce?

Not only do we cook with Sriracha, we smother it on almost everything we eat. It is seriously SOOO good. Hubby even likes it with peanut butter on toast. The mango dipping sauce sounds really good.

I have to say, your daughter, Liv, in the picture with Jolie is really really cute. I can't get over how adorable her clothes are. Very chic with everything matching. The sunglasses and the rain boots. I want to just squeeze and hug her and twirl her around and then steal her clothes!

Sriracha is VERY spicy stuff. The nayonaise probably offsets that a bit. sounds like a great sauce

and the blueberry pancakes- I like mine that way too. Any fresh fruit on pancakes is good for me

Vicki, that blueberry syrup is a staple around here. I love it and it's healthy and simple and pretty! Your kids (and doggie) are super-cute. I know I always say that, but they are. I love Abi's expression. I have been using Siracha sauce for about 6-7 years now. It is something that is often seen sitting on the table like ketchup at many restaurants (mostly veggie ones) around here. I like it for stir-fry and anything that needs a pick me up. Plus, I love the squeezy bottle.

I've never heard of Sriracha sauce, but I'm guessing from the photo it's a type of Asian sauce. I must find out more!

Hi Vicki, 'tis me Kleo... problem with the blogger/Beta sitch but i am reading your posts!!

I have used the Sriracha sauces before out at restaurants. As Peter is wont to say "a little goes a long way" and that is true!!

Your girls are SO cute; love the photos!! Liv and Jolie look so adorable together, and you can't blame Jolie for thinking that one was hers. Liv is pretty in pink! And nice boots/socks with the green stripes. So cute. Is it getting cooler out now by you or is that just her outfit of choice for its beauty? Great sunglasses too!

Pancakes are good anytime and all of the time. The vanilla soymilk probably made the pancakes even better! That's my kinda sandwich with PB 'n' banana. The blueberry maple syrup ROCKS my world. If i could have only one fruit the rest of my life, it would be blueberries... for so many reasons, but mostly because of childhood memories...

Sweet potato/yam fries with a mango dipping sauce? Nice going on the duplication, Vicki! Way to get the server to tell you. Hee hee. I laughed at your post about that. GREAT bowl the sauce is in too. A feast for the eyes AND the taste buds, you can tell.

The Blueberry Maple Syrup looks so pretty. I myself eat my pancakes plain with a dab of whipped Earth Balance.

Sweet Potato Fries? I love those. YUM! We use Sriracha all the time. Good stuff!

my kinda of eating going on there! blue berry maple syrup..yum! We didn't get to pick many blue berries this year .. waaa, rained out.. so i am trying to go easy on them.. and the mango dipping sauce sounds finger licking good! do you really like the Nayonaise? we tried it once but, in the end it got thrown out.

Gotta Love the Siracha! We have used it as a dip for veggie sushi by combining mayonaise (pre-vegan days) and Siracha in about a 60/40 ratio. Very spicy - very yummy!

Everything looks great! I love pancakes with blueberry sauce... I've tried VWaV blueberry sauce but have not tried Isa's pancakes yet. Pancakes with peanut butter--yum.

And I LOVE sweet potato fries. That mango sauce sounds divine--will try this soon! Glad you were persistent!

I must make that sauce, sounds like perfect dip for those sweet potato fries! Sounds like a job for my new food processor I used to make a spiced mayo for fries, I really liked it better than ketchup. I use sriracha in pad thai or any Asian type dish that needs some spicing up. I was introduced to it by Noodles & Co., they keep a bottle of the stuff on every table.

hi madeinalaska: "do you really like the Nayonaise?" i've never liked mayo, and don't like the nayonaise, but i thought that was "normal". i got the nayonaise for hubby's sandwiches (he doesn't like it) and for dips like this (which it works well in). next time, i'll try the veganaise (sp?) which seems to be everybody else's favorite.

hi kleo2- aka kleopatra! :o) you are the best! thank you for getting a new name to sign on "non-beta" blogs! all i can say is what's up? nothing at all seems different to me...other than what i hear from the "betas". it's like dr. seuss's the sneetches -- they had stars upon thairs! i have no star. i guess i just wait for a beta invite -- can any of you just sneak me in the back door? kleo! isn't this a talent of yours?! i remember the fair.....
