Apple-Hemp Muffins & Hemp Brownies

I was pretty excited to finally find some hemp seed nuts at the Co-op, even if it was just 3 lonely bags sitting in the cooler. I snagged myself a sack and then it was just a matter of deciding which recipe from Vive le Vegan! to use them in. It was Dreena's description that convinced me to make these muffins: "Moist, lightly spiced muffins with the added nutrition of hemp seed nuts. These are easy and quick, and sure to please both kids and adults!" Sounded perfect to me, and they were. I baked 10 smaller sized muffins, and 2 larger heart shaped. This was my first time eating hemp, and I expected a stronger flavor, but it it sorta disappeared once cooked ~ no nutty crunch. I can see where these nuts would be easy to add to a recipe to gain the nutrition and not distract from the other flavors. Just yummy muffin goodness.

A couple of weeks ago, I picked up a box of Organic Hemp Plus Brownie Mix by Nature's Path on a Midweek Munchies run. They look pretty good, don't ya think? We were craving chocolate & excited to try them, so each of us took a big, confident bite expecting the yummy goodness of a brownie...only better. I must say we were disappointed and didn't go beyond the first bite. They were dry and flavorless ~ how could that be with such a rich chocolate color? Anybody else tried this or other Nature's Path products? Next batch of brownies will be recipe testing for Catherine, & I'm really looking forward to that! I still have brownies on the brain. :o)

I have to get me some hemp seed nuts. There are a few recipes in Dreena's book that I want to try that call for hemp seed nuts. I've not seen them, but haven't really looked before. I'm now on a quest.
Too bad about the brownies. Seems like a few of us have posted about disappointments in the kitchen this week. If it's any consolation, the picture looks really good. I'm sure Catherine's will be kick-ass!

I gots to ge tme some hemp seeds too. I've never cooked with them.

I've never tried a brownie mix before. I hear Dreena's recipe for brownie is awesome. And, I know for a fact that VwaV's recipe rocks.

Vicki, you're absolutely right about the hemp seeds almost dissolving into the muffin batter. I prefer using hemp seeds in baked goods for this reason - they almost melt away and just add a moist texture!

Your heart-shaped muffins are adorable!

and, yes, I have tried that brownie mix too. I bought both varieties, the hemp and regular, just so I could quickly mix up a batch when I didn't have time to make my own recipe. I found them a bit 'un-brownie'-like... kind of like you said. I mean, they tasted okay for a snack type of thing, but a bit sweet and not chocolatey/gooey enough for me!! :)

Maybe the brownies (and i'm going to resist doing the "hippie thing" and say something about what a lot of folks have done and probably still do with a relative of hemp and homemade brownies here...) needed some kind of topping, or filler... something to add some extra flavor and creaminess...

The muffins look tasty. Love the heart-shaped ones, very sweet.

I always have brownies on the brain. Blondies, too... I'm just a slave to my sweet tooth!

That stink that the brownies didn't turn out great.
My new recommendation for anything chocolate is coconut milk. I mean, I don't think you can go wrong with it haha :) not sure how that would hepl the brownies but it could!! err maybe not haha

I have only tried boxed brownies once and ate a bite and the rest were so hard (probably enerG egg replacer, yuck) they wouldn't even break throwing them at the wall!

Your special hemp muffins are great! You are making me miss my oven more.

About the baked tofu. I buy extra firm (not silken) and either freeze it, defrost and squeeze all the water out of it. Then it can be marinated really fast (just put the slices or chunks in it and make sure they're coated) in soy sauce, ginger, garlic, lime juice and a bit of sucanat. (with the frozen you have to use less soy or it will be WAY too salty.) I add a bit of sesame oil or olive oil (like 1 tsp per block of tofu) and bake for 30-45 minutes or until the marinade is gone.

If you aren't going to freeze the tofu, start with extra firm and cut it up. Cover it in vegetable stock, ginger, soy sauce, garlic, lime juice and bring to a boil. I let it boil for at least 20 minutes, take the cubs or slices out and put them on a sheet pan sprayed with cooking spray. I bake those for about 15 mins on one side, then turn over, spray again and bake for 15 mins more. You could add liquid smoke for a smoked tofu (the cubes are GREAT cold, in salad or mixed with veganaise, shredded carrots, red onion, celery and dijon mustard as a sandwich filling or tossed in pasta salad... The possibilities are endless.

Just make sure that the initial marinade or boiling liquid is not too satly, because the flavors will concentrate.

those hemp natures path hemp brownie mix is delicious if you add a 2 eggs of egg whites with just a little yolk or egg beaters with the added yolk product (new) and a little yolk. Additionally, I also use the olivio spread with olive oil instead of another oil when making the recipe. 3 tablespoons of hemp seeds and/or 4 tablespoons of hemp butter to make these brownies x-tra delicious and x-tra healthful.
