Banana Pancakes & Quinoa Summer Salad
We have some bananas that are too brown for any of us to enjoy. I like mine when they've barely turned yellow, and so does Liv - Abi is less picky, but even these were beyond her. I didn't want to waste them, so I turned to my cookbooks and found a recipe for banana pancakes on pg. 40 in La Dolce Vegan! Though the King of Pancakes still reigns in our family, these were quick & easy to make and thoroughly enjoyed.
Completely inspired by Dreena's Quinoa Spring Salad on pg. 71 of Vive le Vegan!, I came up with my own version using ingredients I had on hand. Starting at 12:00, you see quinoa, tomatoes, shredded carrots, red onion, sesame seeds, sugar snap peas (from our garden!), and corn (cut off the cobb), and my dressing.
My dressing recipe - "Cilantro Vinaigrette"
1/4 C. Wine Vinegar
2 cloves garlic
1 Tsp. Dijon Mustard
1/8 C. Cilantro
1/3 C. Olive Oil
1.5 Tblsp. Agave Nectar
Sea Salt
Pepper

Geezum Crow! Look at that salad!!! I could so eat that whole bowl! It sounds super delicious and looks wonderful.
I'm home sick today (stupid cold) and had some oatmeal, 1/2 of a big seedy multi-grain bagel with tofutti cream cheese and a juice. Now that I see your pancakes I wish I'd had those instead. Maybe tomorrow.
Yummy looking salad! I've been mulling over something similar to add to my cookbook -- I'm thinking about a flexible grain salad -- X amount of cooked chilled grain, x amount of veggies, x amount of protein, plus a rockstar dressing. :)
I can't wait to see where the PB dip appears! (Make sure you taste it before you serve it, because it might not be sweet enough -- I did cut out quite a bit of the original recipe's sugar. I like it, but I have a pretty low tolerance for sugar these days!)
Banana pancakes! What a great idea. I am one of those weirdos who love bananas that are VERY ripe, as in brown spots and all, right before they get mushy.

This Summer Salad looks awesome. I hope you used Dreena's wonderful Blueberry Syrup recipe, that's the only syrup I will ever use now. I don't know if you remember, but I was on a huge pancake kick a while back (if you have time, you can check all my variations). I like how you presented the prepped veggies first, I always like looking at that.
